No Churn Tahini Cardamom Ice Cream
Ice cream used to be one of my major weaknesses. If you had asked me what my favorite food was a few years ago, I probably would have said it was ice cream. As you start to live a more healthful lifestyle it gets easier to resist some of the more not so healthy foods you used to depend on for satisfaction. Now if you ask me what my favorite food is I would say it would be salad. Quite a different answer.
I still enjoy ice cream!
This absolutely doesn’t mean that I don’t enjoy a good ice cream from time to time. This summer while on vacation in Portland, we made a stop at a local ice cream shop, Salt and Straw. If you check out all of the travel websites, this is one place that is usually always on the list as a must stop. I had to check it out! They had many traditional flavors, but also featured a rotation of specialty ice creams. This month they were featuring flavors inspired by local food truck vendors. The one that stood out to me the most was their tahini cardamom flavor (it sounded a little scary, too!). I knew immediately I had to give it a try. Cardamom is one of my favorite spices, but I just never really know what to make with it other than chai tea.
Let me tell you — this was one of the best ice cream flavors I have ever tried! The tahini was rippled throughout the ice cream, just like a caramel sauce, and the cardamom added just the perfect amount of spice. I could now see why this place was voted “a must” when in Portland. I also forgot to mention the line out the door, which was well worth the wait.
As often happens when I try something that good, I wanted to create a version at home that I could enjoy anytime I wanted. My version has only four ingredients and is completely dairy-free. The best part is that you don’t even need an ice cream maker to make this Tahini Cardamom Ice Cream yourself. You could even freeze the mix into popsicle molds for a bowl free summer treat. A little bit of Portland for you to enjoy at home.

No Churn Tahini Cardamom Ice Cream
Ingredients
- 1 can 13.5 ounce full fat coconut milk
- 1/2 cup date paste I make mine by soaking pitted dates overnight in water, draining, and then blend in a food processor until its paste
- 1/2 cup tahini
- 1/2 teaspoon cardamom ground
Instructions

Add everything to a blender and mix until well combined.

Add ice cream base to a freezer proof dish and freeze until set as least a few hours or overnight.

I like to pull out the ice cream 15-20 minutes before I eat it to let it soften a bit to scoop.

Store in an airtight container in the freezer for up to one week.

most no churn ice cream recipes i have seen are using lots of heavy cream and evaporated milk, so i am excited to try this healthier option. thank you.

I had a mad idea about a halva flavoured ice cream, consulted Prof Google and here this was. It sounds sensational. I’m a recent vegan, and as of yesterday a recent ice cream maker owner, although I see it doesn’t need churning. I also do a newsletter for a naturopathy clinic here in Australia. The most unusual flavour ice cream I’ve tried is horseradish flavour! It was going to be served with fish I think if I remember rightly! (A head chef gave me some to try!) it was delicious if a bit unusual
